This allows us to have a total traceability of every single ingredient, always giving priority to those of our territory of which we know every nuance.<br><br>Furthermore, we use raw materials guaranteed by the main Italian protection consortia, PDO and PGI such as: White Beef from the Central Apennines (Chianina Meat PGI), Prosciutto Toscano PDO, Mortadella Bologna PGI, Parmigiano Reggiano, Pecorino Toscano DOP, Gorgonzola DOP, Lemon of Sorrento IGP, Balsamic Vinegar of Modena.<br><br>We carefully choose the typical excellences from the best producers of other regions, such as Puglia, from which the burrata and sun-dried tomatoes come from. The best Tuscan and Italian raw materials for the protection of our consumers in terms of taste and food
