Exclusively Tuscan ingredients: durum wheat semolina, soft wheat flour type “0”, Italian eggs from category A free-range hens, spring water from the Casentinesi Forests National Park. The meticulous search for local ingredients to eliminate transport, affecting the environment less and less, and above all to privilege what our territory offers us.

Filling: selected raw materials

We select from the excellent local producers the genuine raw materials of our region such as spinach, ricotta, potatoes, truffles and others. This allows us to have a total traceability of every single ingredient, always giving priority to those of our territory of which we know every nuance.

Furthermore, we use raw materials guaranteed by the main Italian protection consortia, PDO and PGI such as: White Beef from the Central Apennines (Chianina Meat PGI), Prosciutto Toscano PDO, Mortadella Bologna PGI, Parmigiano Reggiano, Pecorino Toscano DOP, Gorgonzola DOP, Lemon of Sorrento IGP, Balsamic Vinegar of Modena.

We carefully choose the typical excellences from the best producers of other regions, such as Puglia, from which the burrata and sun-dried tomatoes come from. The best Tuscan and Italian raw materials for the protection of our consumers in terms of taste and food safety.

Traditional flours but not only: our "Grani Antichi"

"Grani Antichi" Valentini is a gastronomic culture project that was born and developed with one goal: to make tradition and craftsmanship coexist with a "contemporary feeling".

The Verna wheat we use is grown in Tuscany in the Casentinesi Forest National Park above 400m above sea level, it is slowly stone ground to maintain its lipid-vitamin properties. This grain is low in protein and low in gluten.

Tests carried out on people fed with this particular grain resulted in a significant lowering of bad cholesterol, preventing cardiovascular disease, with a strong beneficial impact on intestinal inflammatory indices connected with the onset of colon cancer.
